Rajgira Pecan Chikki

Ingredients

  • 1 cup puffed amaranth seeds (rajgira)
  • 10-15 American Pecans
  • 1 cup chopped jaggery meant for chikki (chikki ka gud)
  • Ghee for greasing
  • A pinch of salt
  • ½ tsp green cardamom powder

Process

  1. Heat a pan. Add American Pecans and roast for 4-5 minutes on medium heat.
  2. Transfer on a chopping board and chop roughly.
  3. Heat a pan. Add the jaggery and cook till it reaches hard ball consistency.
  4. Grease a small mithai tray with ghee.
  5. Add puffed amaranth and American Pecans to jaggery and mix well. Add salt and green cardamom powder and mix well.
  6. Transfer in greased tray and level evenly with the help of a rolling pin.
  7. Make markings at equal distance and set aside for 35-40 minutes.
  8. Cut into squares and serve.
